Asian Inspired Zucchini Skewers

Preparation

Soak the skewers in water, while you thinly slice the zucchini using a vegetable peeler.

Take the zucchini pieces and fold them up to create the loop ribbon look (like the popular Christmas hard candy ribbon), and push the zucchinis onto the skewers
Sauce

In a medium bowl, add the soy sauce, maple syrup, oyster sauce, sriracha, miso and rice vinegar. Mix together.
Cooking

Add the skewers to a grill or cast iron pan over medium heat, and sear on all sides.

Pour the sauce over the seared zucchini on the grill or pan.

Sear on each side another 1 minutes or until desired crispness.
Serve

Serve over rice and top with scallions and sesame seeds
