Green Curry Soup

This recipe is based off TikTok’s Brendan Pang’s Red Curry Wonton Soup. Since red curry is a bit too spicy for me, we switched to the Green Curry, that I know and love. And this soup is perfect!

Green Curry Soup

Imagine a steaming bowl of Green Curry Soup that tantalizes your senses from the moment it's placed in front of you. The broth, a fragrant blend of sautéed onions, ginger, and creamy coconut milk, is enriched with chicken stock and the distinctive notes of Japanese green curry, creating a vibrant, aromatic base. The baby bok choy, with its tender leaves and crisp stems, adds a delightful crunch and a touch of verdant freshness. The dumplings, or shumai, nestled in the broth, are plump and savory, each bite bursting with umami goodness.

Simmered gently in a mirin-enhanced chicken stock, the baby bok choy and dumplings absorb a delicate sweetness, balancing the spiciness of the curry. As you ladle the rich, green curry soup over the bok choy and dumplings, the bowl transforms into a harmonious blend of textures and flavors. The creamy, spicy broth coats each dumpling, while the bok choy remains vibrant and crunchy. For Curry

  1. Heat vegetable oil in a large pot over medium heat. Add onion, ginger and garlic, and cook for 2-3 minutes, stirring until fragrant and soft.
  2. Add the curry paste and cook for a further minute.
  3. Mix in the chicken stock and coconut milk. Bring to a boil, then reduce to s simmer for 10 minutes.
  4. Add lime juice, taste and season as desired.

For Dumplings and Bok Choy

  1. In separate pot add chicken broth, soy sauce, mirin, vinegar and sesame oil bring to a boil.
  2. If using a bamboo steamer, place dumpling flat in one of the steamer layers. Cover and place over pot with broth as soon as it starts to boil. Steam 10 min.
  3. After 10 min add baby bok choy halves to broth and quickly recover with bamboo steamer of dumplings. Reduce heat to medium high and cook for 5 min.

Assembly

  1. Ladle soup into a bowl and add 5-6 dumplings and baby bok choi.
  2. Top with scallions and or a few dashes of smoked paprika if you like and enjoy.

Note

This makes a delicious low to no heat curry soup. If you like heat use Thai red curry paste. OR add a bit into your bowl if you are in love with a person who’s not crazy about spice but loves curry.😉
