Jalapeno Popper Chicken Tacos

Cook the bacon, saving the grease if possible.

In a large bowl, mix together the chicken, cheeses, sour cream, jalapenos, spring onion, and spices. (everything but the tortillas and oil).

Once the bacon is cooked, crumble it, and add to the chicken mixture, folding it in to incorporate.

Spread the filling over half of a taco, and fold over the other half, gently pressing down. Do not overfill these - once they heat up, the filling will begin to ooze, and overfilling means lots of ooze into the pan.

Use the bacon grease or spray oil to light coat the tortilla, and then in a skillet, pan fry the tacos over medium high heat for a couple of minutes on each side. Can do these in batches if needed.
Note
The Street Market Tortillas can be found in the Old El Paso section of most suppermarkets or box stores. You can also use any large tortillas (will decrease the # made) or flour tortillas.
