In a mixer bowl, with the dough hook attached, add in the warm milk, sugar (2tsp) and yeast and give a little stir. Let sit for 10 minutes.

Once frothy, add in the AP flour an Bread Flour, followed by the butter, sugar (1/4 cup), vanilla and a pinch of salt. Slowly knead it till it comes together, and then whip it until smooth.

Dust your counter with flour, and place the dough on the counter. Work into a ball.

Place in a bowl and cover with a damp cloth. Allow to rest until it has doubled in size.

A few hours later, remove the dough and split into 6 balls (about the size of a tennis ball). Place balls on a sheet pan, cover with towel and let them rise again.

In a large pot, fill with oil and bring it up to around 350F degrees.

In a large bowl, add a cup (or more) of sugar for the coating.

Once the balls are the size of a cat head (about 4-5 inches wide, 2-3 inches tall), gently take one and place it in the hot oil. Flipping it once the bottom is golden brown.

Once totally golden brown, remove from the oil and let drain on a rack for a few seconds. And then place the ball into a bowl of sugar and coat all away around. And place on a serving plate.

Repeat with the remaining dough balls.
