INGREDIENTS:
Chicken:
2 Boneless Skinless Chicken Breast
½ tsp Curry Powder
Sauce:
½ cup Coconut Oil
1 Onion
3 Garlic, minced
3 Roma Tomatoes, diced
1 Red Bell Pepper, diced
14.50 oz Can of Coconut Milk
½ cup Swerve Brown Sugar
2 tbsp Curry Powder
1 Dice chicken in to 1 inch cubes. In a medium bowl add chicken, seasoning and cumin and toss to coat. Set aside.
2 Heat the Coconut Oil over medium high heat and add the onions and bell peppers. Saute until onions are just about translucent.
3 Add the seasoned chicken and the curry powder in with the onions and peppers and continue to cook until chicken is browned.
4 Add the tomatoes, tomato sauce and the coconut milk and stir well. Let simmer for 20 minutes over medium heat.
5 Add the brown sugar and stir well. Let cook for an additional 5 minutes and then serve over rice.
