In a food processor, grind the nuts to a fine crumb.

Add the nuts to a bowl, add the cinnamon, spices, sugar, and butter to them. Mix until the mixture is a paste.

Preheat the waffle maker

Roll out the puff pastry and cut the pastry into enough tops and bottoms for your waffle maker (if your maker has 4 4" square waffles, then make 8 4" squares)

On the bottom pieces of puff pastry, evenly divide the nut mixture between the pieces, and spread the mixture around leaving about half inch free around the edges.

Place the top layer on the bottom/nut mixture, and press the sides down to seal the nut mixture in.

Add the pastry sandwich to the waffle maker, and let it cook. Turning the waffle over if needed halfway through.

While the waffle is cooking, in small bowl, combine the honey, lemon juice and rose water.

When the waffle comes out, place on a plate and quickly spoon the honey syrup to the hot waffle, allowing it to soak in. Turn over and repeat.
